Sweet Potato & Bacon Slice
Ingredients
- 1 sweet potato (grated)
- 1 zucchini (grated)
- 4 bacon rashers (chopped finely)
- 1 onion (chopped finely)
- 4 eggs
- 1 cup self-raising flour
- 1 cup cheese
- 1 tbs garlic
- 1 tbs chives
- 1/2 tsp sea salt
- 1 tsp pepper (to taste)
Method
- Preheat the oven to 220˚C.
- Place all the ingredients together into a bowl and mix well.
- Pour into a non-stick slice tray.
- Bake at 220˚C (200˚C fan-forced) for 40 - 50 minutes. Serve with a salad for a quick lunch.
