Mum's Veggie Stew
Ingredients
- 1 stick celery
- 2 carrots
- 1 onion
- 1 parsnip
- 1 swede
- 2 potatoes
- 1 cup peas
- 500g chuck steak
- Beef stock cube
- Salt & pepper
Method
Peel and dice carrots, onion, parsnip, swede and potatoes. Leave the potatoes a little larger so they don’t go too soft. Dice the celery.
Add all ingredients to a large saucepan and cover with water. Bring to the boil and then simmer for approximately 2 hours.
Serve with bread and add some tomato sauce if you like.
